Recipe: Cherry Bourbon Chipotle Cheesecake Brownies

Wow! It's a mouthful to say all that... just don't try with a mouth full of these amazing brownies. 

These made sound like a lot of work to make but I promise it's easier than you think and only take a few minutes longer than a basic brownie. 

So go ahead and grab your favorite boxed brownie mix or the ingredients for your favorite scratch recipe. We're going to top off the brownie batter with a quick cheesecake batter and swirl in some Cherry Bourbon Chipotle Spread, bake and voila! A sweet treat with gourmet pep. Spice up your Valentine's treat or surprise guests with this twist on a classic dessert.

To get a nice swirl you're going to want to drop spoonfuls of the spread in a pattern and then run a toothpick in a back and forth motion until you get the effect you like.             

Recipe:

Favorite brownie mix
8oz cream cheese- softened
1/4 greek yogurt- I used vanilla but you can use plain
1/3 cup powdered sugar
dash of salt
about 1/2 a jar of Cherry Bourbon Chipotle Spread

Preheat your oven to 375 degrees Fahrenheit and grease a 9X13 pan. Pour in your brownie batter. Mix together the cream cheese, yogurt, powdered sugar, an salt until smooth. Spoon on top of the brownie batter and gently spread evenly. Dollop the spread on the cheesecake batter and use the toothpick to swirl it around- try not to pull the brownie batter up to the top as you do this.

Bake for around 30 minutes. Check carefully, you want a toothpick to come out of the brownie batter clean and you want the cheesecake to start getting golden.

Let cool and enjoy fully.

Flavor of the Month: Cherry Bourbon Chipotle

Here we are on our second Flavor of the Month already! February's flavor is our incredible and unique Cherry Bourbon Chipotle.


We start with some ripe and juicy sweet cherries, simmer them with some ground up chipotle pepper, and top it off with a hearty splash of quality Kentucky Bourbon. This versatile spread is delicious on burgers, pork chops, cheese plates, and -believe it or not- even brownies! We recommend pairing it with gouda, mild cheddar, or gruyere. 

Did you know that a chipotle is not a different type of pepper but rather a process? While jalapenos are well known for their green color, when they are fully ripened they turn red and have a higher heat index. These red jalapenos are then smoked and dried, adding a delicious smokey flavor to the heat of the pepper. 

Our delicious sweet cherries come from none other than Frecon Farms in Boyertown, Pennsylvania. In 2018 we purchased 700 pounds of this delicious fruit. In the kitchen we washed, de-stemmed, and pitted all those cherries to bring you this delightful flavor. Frecon Farms has a rich history, with the family's 3rd generation currently running the orchard and market. They put an incredible effort into growing quality fruit while working in harmony with the surrounding land and wildlife. You can read more about their growing practices on their website here. Recipe: Ghost Pepper Meatballs

Normally you won't find me making meatballs from scratch very often. Somehow when I turn them in the pan almost half of them fall apart. That's how I know I really got it together with this recipe- not a single one broke open while turning! I'll admit to being quite proud of how these turned out. 

Don't let the title frighten you off! These have a flavorful and slightly sweet bite to them without overpowering the dish. These would make a delicious cheesy meatball sub, a spicy appetizer, or a great twist to the traditional spaghetti and meatball night.

Ready? Let's start cooking!

Ingredients:

  • 1 lb. Ground Beef
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/2 small onion, minced well
  • handful fresh spinach, chopped fine
  • 2 garlic cloves, minced
  • 1 heaping tablespoon Ghost Pepper Spread
  • salt (I used our Basil Infused Sea Salt for added flavor)
  • black pepper
  • paprika
  • cumin

Mix all ingredients together in a large bowl. Mix well, pockets of breadcrumbs or onion will cause difficulty forming the balls. I used a cookie scoop to create meatballs uniform in size. Lightly grease a large frying pan and put on medium heat. Sear the meatballs and turn frequently until browned on all sides. 

I love all the colors brought together by the hot peppers, spinach, and onions!

Next time I may even try stuffing these with a nice cheese to really get the crowd's mouths watering. Do you think a sharp cheddar or a creamy gouda would be best? Let us know if you try it!

A perfect way to warm up on a cold winter evening, we enjoyed these on a bed of buttered spaghetti noodles with some steamed broccoli. Simple and comforting.

Welcome to our very first Flavor of the Month! January features not one, but three flavors: our hot pepper trio!

Our trio starts with the Jalapeno Spread. Just green jalapenos and poblanos, simmered and sweetened to a delightfully flavorful finish with just the right amount of heat. This spread is perfect in place of relish or matched with manchego or cheddar cheese.

To create our Hot Pepper Spread, we start with that beautiful jalapeno and poblano base then finish it up with some ripe in season peppers- cayenne, habanero, lemon, fish- creating a new layer of flavor with a satisfying heat. Try this on grilled cheese or pair with manchego or gouda. 

 



Last, but far from least, our Ghost Pepper Spread is not for the easily frightened. We combine about a third of our green pepper base, a third of that savory hot pepper base, and top it off with the scariest Ghost Peppers we can find. A powerful heat with a delectable flavor, mix this spread with cream cheese or glaze a meatloaf to truly amaze your guests. 

 

 

 

 

 

 

 

 

While some of our Ghost Peppers are grown right here at the kitchen, the rest of our hot peppers are organically grown in Lancaster, PA and delivered to us by Lancaster Farm Fresh Coop.
